About this role

Department of Molecular Sciences SLU is seeking an independent and motivated research specialist for a position focused on sensory perception and consumer evaluation of plant-based foods. The successful candidate will work at the Department of Molecular Sciences, SLU, and collaborate with the interdisciplinary research center PAN Sweden. About the Job The transition to plant-based foods offers benefits for health, the environment, and climate. However, this dietary shift also presents challenges related to consumer acceptance, where sensory attributes such as taste, texture, and appearance play a key role. In recent years, several research initiatives, including PAN, HealthFerm, and related projects, have focused on characterizing and improving the functional and nutritional properties of plant-based proteins and fibers. These efforts include the development of tofu and tempeh from Nordic crops. As research continues to enhance the texture and nutritional profile of plant-based foods, a close link between sensory perception and consumer response is crucial for product success. The Research Specialist will: • Design and conduct sensory evaluations of plant-based foods. • Analyze and interpret sensory data and consumer data. • Prepare and manage applications for ethical approval within the Swedish system. • Work independently on their own research project while supporting colleagues in ongoing sensory studies. • Contribute to the dissemination of research results through reports, publications, and presentations. Your Background Applicants should have: • A background in sensory science, food science, or a related field. • Experience with sensory evaluation methods and statistical or multivariate data analysis. • Familiarity with consumer studies and ethical approval processes in Sweden is advantageous. • Strong skills in experimental design, data management, and reporting. • The ability to work both independently and collaboratively in interdisciplinary projects. • A PhD not older than 5 years at the time of employment. Personal attributes such as a strong sense of responsibility, effective communication skills, and an organized, proactive work style are highly valued. Previous experience with plant-based foods or product development is considered advantageous.
